Few days ago I stumbled upon this recipe for a delicious salad and found it to be a great and quick in-between meal 🙂
Here is the recipe:
- 1 Avocado
- 250g Cottage Cheese
- Tomatoes as you like
- Peppers as you like
- Lemon juice of half a lemon
- Peppergrass
- Rucola
- Salt, pepper, a table spoon of olive oil
Crush the avocado and mix it with the cottage cheese, add all the veggies cut in small pieces, add everything else and top with Rucola – done :).
