Sunday Salad

 

Few days ago I stumbled upon this recipe for a delicious salad and found it to be a great and quick in-between meal 🙂

Here is the recipe:

  • 1 Avocado
  • 250g Cottage Cheese
  • Tomatoes as you like
  • Peppers as you like
  • Lemon juice of half a lemon
  • Peppergrass
  • Rucola
  • Salt, pepper, a table spoon of olive oil

Crush the avocado and mix it with the cottage cheese, add all the veggies cut in small pieces, add everything else and top with Rucola – done :).
